Comfort in a Bowl: Broccoli “Cheddar” Soup

Creamy Broccoli “Cheddar” Soup (Dairy-Free + Allergy-Friendly) This cozy classic gets a gentle allergy-friendly makeover—no dairy, no stress, just warm, creamy goodness in every spoonful. Packed with tender broccoli, sweet carrots, and melty dairy-free cheddar-style shreds, it’s the kind of soup that makes you feel taken care of. Perfect for chilly evenings, quick lunches, or anytime your crew needs a little comfort. Pair it with your favorite safe bread or crackers and enjoy a moment of calm.
Ingredients
1 medium onion, diced
1 tbsp + ¼ cup vegan butter (I use Country Crock Plant Butter with Olive Oil)
¼ cup all-purpose flour (or gluten-free blend if needed)
2 large broccoli heads, chopped (about 4 cups florets)
2 cups julienned or shredded carrots
4 cups low-sodium vegetable broth (or safe chicken broth)
2 cups dairy-free milk (I love Oatly Full Fat Oat Milk)
1 cup dairy-free cream (I use Country Crock Plant Cream)
8 oz (about 2 cups) dairy-free cheddar-style shreds (Daiya is my go-to)
Salt & pepper to taste
Instructions
Sauté onion In a large pot, heat 1 tbsp vegan butter over medium heat. Cook diced onion for 3–5 minutes until softened.
Make a roux Add remaining ¼ cup vegan butter. Once melted, whisk in flour and cook for 2 minutes.
Add liquid Slowly whisk in broth, dairy-free milk, and dairy-free cream. Stir until smooth and combined.
Simmer Bring to a gentle simmer and cook for 20 minutes, stirring occasionally.
Add vegetables Stir in broccoli and carrots. Simmer for 20–25 minutes, or until vegetables are tender.
Add cheese Stir in dairy-free cheddar shreds until melted and soup is creamy.
Season & serve Add salt and pepper to taste. Serve hot with allergy-friendly bread or crackers.
