Allergy-Friendly Chicken Parmesan

Crispy, saucy, and totally comforting — without the top allergens. This cozy classic gets a safe twist for allergy families. It’s perfect for weeknights or a special “just because” dinner. We serve ours over gluten-free pasta with a side of roasted broccoli, but it’s just as good tucked into a sandwich or layered over rice.

Ingredients

  • For the chicken:

    • 2 boneless, skinless chicken breasts, sliced into cutlets

    • ½ cup Schar gluten-free breadcrumbs

    • ¼ cup Follow Your Heart dairy-free parmesan

    • 3 tbsp Kinder’s Italian Chicken Seasoning

    • ½ tsp garlic powder

    • Salt & pepper to taste

    • 1–2 tbsp olive oil for pan-frying

    For the sauce:

    • 1½ cups Rao’s Marinara (check label for hidden allergens)

    • Optional: pinch of red pepper flakes for heat

    For topping:

    • ½ cup Daiya dairy-free mozzarella shreds

    • Fresh basil or parsley for garnish

  • Salt & pepper to taste

Instructions

  1. Prep the chicken: Pat chicken dry and season with salt and pepper. In a shallow bowl, mix breadcrumbs, parmesan, Italian seasoning, and garlic powder.

  2. Coat & crisp: Dredge each cutlet in the breadcrumb mixture, pressing gently to adhere. Heat olive oil in a skillet over medium heat and cook chicken 3–4 minutes per side until golden and cooked through. Transfer to a baking dish.

  3. Sauce & bake: Spoon marinara over each cutlet, then sprinkle with mozzarella shreds. Bake at 375°F for 20 minutes, or until cheese is melty and bubbly.

  4. Serve & smile: Garnish with fresh herbs and serve warm. We love it over gluten-free spaghetti with roasted veggies.

Tips & Swaps

  • Breadcrumbs: Schar gives a great crunch, but crushed allergy-safe cereal works too.

  • Cheese: Daiya melts beautifully — just don’t overbake.

  • Egg-free coating: No egg needed! Olive oil helps the crumbs stick and crisp.

  • Make it a meal: Pair with roasted veggies or a simple salad for a full plate.
