Maple Banana Muffins (Allergy-Friendly!)

These muffins are on regular rotation in our house—and for good reason. They’re naturally sweetened, allergy-friendly, and easy to adapt for gluten-free needs (I just swap in King Arthur’s Measure for Measure—no extra tweaks needed). They’re soft, cozy, and perfect for breakfast, lunchboxes, or freezing for later.

Ingredients

  • ⅓ cup melted coconut oil or extra-virgin olive oil

  • ½ cup maple syrup or honey

  • 2 servings Bob’s Red Mill Egg Replacer (or use applesauce for extra moisture)

  • 1 cup packed mashed ripe bananas (about 3 bananas)

  • ¼ cup milk of choice or water (I use oat milk for best consistency)

  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • ½ teaspoon salt

  • ½ teaspoon cinnamon, plus more for sprinkling

  • 1¾ cups whole wheat flour or gluten-free Measure for Measure flour

  • ⅓ cup old-fashioned oats (optional; if celiac, use certified gluten-free oats)

  • 1 teaspoon turbinado sugar or other granulated sugar, for sprinkling

Instructions

  1. Preheat oven to 325°F (165°C). Grease or line a 12-cup muffin tin—I prefer using liners for easy cleanup.

  2. In a large bowl, whisk together the oil and maple syrup. Add your egg replacer and whisk again. Stir in mashed bananas and milk.

  3. Add baking soda, vanilla, salt, and cinnamon. Mix until smooth.

  4. Add flour and oats. Stir gently with a spoon until just combined. If you’d like to add mix-ins (nuts, chocolate chips, dried fruit), fold them in now.

  5. Divide the batter evenly between muffin cups, filling each about two-thirds full. Sprinkle tops with a pinch of oats and sugar.

  6. Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let muffins cool in the pan on a rack. If needed, run a butter knife around the edges to loosen.
