Apple Cinnamon Bread

This apple cinnamon bread is like a hug in loaf form—soft, spiced, and full of tender apple bits. It’s easy to make, smells amazing while baking, and slices beautifully for breakfast, lunchboxes, or afternoon tea. No dairy, no eggs, no nuts—just simple ingredients and big comfort.

Ingredients

  • 2 cups all-purpose flour (or gluten-free blend if needed)

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1½ tsp ground cinnamon

  • ¼ tsp ground nutmeg (optional)

  • ½ cup brown sugar

  • ¼ cup white sugar

  • ½ cup safe oil (like avocado or canola)

  • ¼ cup unsweetened applesauce (egg replacer)

  • ½ cup dairy-free milk (Oatly or Ripple work well)

  • 1 tsp vanilla extract

  • 1½ cups peeled, finely chopped apple (Honeycrisp or Gala are great)

Instructions

  1. Preheat oven Heat oven to 350°F. Grease a 9x5-inch loaf pan or line with parchment.

  2. Mix dry ingredients In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. Mix wet ingredients In a separate bowl, stir together sugars, oil, applesauce, dairy-free milk, and vanilla.

  4. Combine & fold in apples Add wet ingredients to dry and stir until just combined. Fold in chopped apples gently.

  5. Bake Pour batter into prepared pan. Bake for 50–60 minutes, or until a toothpick comes out clean.

  6. Cool & slice Let cool in pan for 10 minutes, then transfer to a wire rack. Slice when fully cooled.

Notes

  • Freezes beautifully! Wrap slices individually or freeze the whole loaf.

  • Reheat in the microwave or toaster oven for a warm, just-baked feel.

  • Want a little crunch? Sprinkle cinnamon sugar or safe seeds on top before baking.

  • Works great as muffins too—just reduce bake time to 18–22 minutes.
