Ingredients:

  • 1 box Betty Crocker Super Moist French Vanilla Cake Mix

  • Bob’s Red Mill Egg Replacer (1 Tbsp powder + 2 Tbsp water per egg)

  • 1 cup water or safe non-dairy milk (as listed on box)

  • ½ cup vegetable oil (as listed on box)

  • 1 tub Pillsbury Funfetti Vanilla Frosting

  • Allergy-friendly sprinkles (optional)

Directions:

  1. Preheat Oven Heat oven to 350°F. Line cupcake tins with paper liners.

  2. Prepare Egg Replacer In a small bowl, whisk together 1 Tbsp egg replacer powder + 2 Tbsp water for each egg called for on the box (usually 3 eggs = 3 Tbsp powder + 6 Tbsp water).

  3. Mix Batter In a large bowl, combine cake mix, prepared egg replacer, water or non-dairy milk, and oil. Stir until smooth, following box instructions.

  4. Fill & Bake Fill cupcake liners about ¾ full. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.

  5. Cool Completely Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool fully before frosting.
